To make mooncakes using a hand mixer, follow these steps:


Gather your ingredients: You'll need mooncake dough, which typically consists of flour, golden syrup, alkaline water, and vegetable oil. Additionally, prepare your desired mooncake fillings, such as red bean paste or lotus seed paste.

Assemble the mixer: Attach the beaters or dough hooks to your Hand Mixer. Make sure they are securely in place.


Mix the dough: In a large mixing bowl, combine the flour, golden syrup, alkaline water, and vegetable oil. Start the hand mixer at a low speed and gradually increase it to medium-high. Mix the dough until it comes together and forms a soft, slightly tacky texture.


Knead the dough: Once the dough has come together with the mixer, transfer it to a clean, lightly floured surface. Use your hands to knead the dough for a few minutes until it becomes smooth and elastic.

Rest the dough: Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes. This will allow the gluten to relax and make the dough easier to work with


Prepare the fillings: While the dough is resting, prepare your mooncake fillings if they require any additional processing. For example, you might need to shape red bean paste into small balls or mix lotus seed paste with nuts or other ingredients.

Shape the mooncakes: Once the dough has rested, divide it into smaller portions, each weighing around 30-40 grams. Flatten each portion with your hands, then place a ball of filling in the center. Wrap the dough around the filling and shape it into a smooth round or square mooncake shape.


Decorate the mooncakes (optional): Use a mooncake Mold or patterned stamp to press a design onto the surface of each mooncake. This can give them a traditional appearance.

  • Bake the mooncakes: Preheat your oven to the specified temperature for mooncakes. Place the shaped mooncakes onto a baking tray lined with parchment paper. Bake them in the preheated oven for the recommended time, typically around 20-25 minutes, or until golden brown.

  • Cool and store: Once baked, remove the mooncakes from the oven and let them cool completely on a wire rack. Once cooled, they can be stored in an airtight container for a few days to allow the flavors to develop.
